Polenta
Ingredients:
- 1 cup yellow cornmeal
- 3/4 tsp dried basil, crushed
- 1/2 tsp salt
- 1/4 cup finely shredded Parmesan cheese
Directions:
- Coat a 2-quart rectangular baking disk with cooking spray; set aside.
- In a saucepan bring 2 3/4 cups water to boiling.
- In a mixing bowl combine cornmeal, 1 cup cold water, basil, salt.
- Slowly add the cornmeal mixture to the boiling water, stirring constantly.
- Cook and stir until mixture returns to boiling.
- Reduce heat to low, cook uncovered for 10 to 15 minutes, until mixture is very thick, stirring constantly.
- Stir in the 1/4 cup Parmesan cheese, stirring until melted.
- Spread in prepared baking dish. Cover and chill for 2 hours or overnight.
