Polenta

Ingredients:

  • 1 cup yellow cornmeal
  • 3/4 tsp dried basil, crushed
  • 1/2 tsp salt
  • 1/4 cup finely shredded Parmesan cheese

Directions:

  1. Coat a 2-quart rectangular baking disk with cooking spray; set aside.
  2. In a saucepan bring 2 3/4 cups water to boiling. 
  3. In a mixing bowl combine cornmeal, 1 cup cold water, basil, salt. 
  4. Slowly add the cornmeal mixture to the boiling water, stirring constantly.
  5. Cook and stir until mixture returns to boiling.
  6. Reduce heat to low, cook uncovered for 10 to 15 minutes, until mixture is very thick, stirring constantly
  7. Stir in the 1/4 cup Parmesan cheese, stirring until melted.
  8. Spread in prepared baking dish. Cover and chill for 2 hours or overnight.
