Turkey-Polenta Casserole

Ingredients:

  • 8 oz Italian sausage or uncooked turkey Italian sausage
  • 1/2 cup chopped carrot
  • 1 1/3 cups tomato and herb pasta sauce
  • 1 cup shredded provolone or mozzarella cheese (4 oz)
  • 1/3 cup grated or shredded Paremsan cheese

Directions:

  1. Make Polenta.
  2. Remove casing from sausage, if present. In medium saucepan cook sausage and carrots until sausage is no longer pink. Drain off fat. Reserve 3/4 cup of pasta sauce in fridge. Stir remaining sauce into sausage mixture. Cool slightly; cover and chill.
  3. To assemble, remove polenta from baking dish, cut into 24 triangles or squares. Spread reserved 3/4 cup pasta sauce in bottom of same rectangular baking dish. Arrange polenta on top of sauce. Spoon chilled sausage mixture over polenta. Sprinkle with provolone
  4. Cover dish with foil. Bake in a oven at 400 for 25 minutes. Remove foil. Sprinkle 1/4 cup Parmesan cheese over top Bake, uncovered, 5 to 10 min more until cheese is bubbly and begins to borwn. Let stand for 10 minutes.
