Turkey-Polenta Casserole
Ingredients:
- 8 oz Italian sausage or uncooked turkey Italian sausage
- 1/2 cup chopped carrot
- 1 1/3 cups tomato and herb pasta sauce
- 1 cup shredded provolone or mozzarella cheese (4 oz)
- 1/3 cup grated or shredded Paremsan cheese
Directions:
- Make Polenta.
- Remove casing from sausage, if present. In medium saucepan cook sausage and carrots until sausage is no longer pink. Drain off fat. Reserve 3/4 cup of pasta sauce in fridge. Stir remaining sauce into sausage mixture. Cool slightly; cover and chill.
- To assemble, remove polenta from baking dish, cut into 24 triangles or squares. Spread reserved 3/4 cup pasta sauce in bottom of same rectangular baking dish. Arrange polenta on top of sauce. Spoon chilled sausage mixture over polenta. Sprinkle with provolone
- Cover dish with foil. Bake in a oven at 400 for 25 minutes. Remove foil. Sprinkle 1/4 cup Parmesan cheese over top Bake, uncovered, 5 to 10 min more until cheese is bubbly and begins to borwn. Let stand for 10 minutes.
